  3. Bake the lamb chops in the oven, uncovered, for 8 to 10 minutes, or until the internal temperature reaches 140°F (60°C) for medium-well, as measured with an instant-read thermometer.
  4. Remove the skillet from the oven and cover the chops with aluminium foil. Allow them to rest for 8 to 10 minutes to ensure they stay juicy. Serve the lamb chops on a warm plate to maintain their temperature and with mint jelly on the side for a refreshing contrast.
